Succulent Sunday ~ Impossible Cake

This is a recipe from Lidia Malagón that I learned on the channel Utilisima and I loved it, not only for its delicious flavor but also because it has a very attractive appearance and is great for parties because it really gets people’s attention. You can also make it to have it as a dessert and enjoy a piece in the afternoon with coffee.

It’s a very easy recipe because it’s done with cake mix and it saves a lot of preparation time. For those of you who are in the tri-state area of New York, this can be a very good entertainment for this rainy Sunday in which we cannot get out of the house. Have a sweet Sunday! Be safe.

Impossible Cake


Ingredients:

1 bottle cajeta*
250 g vanilla or chocolate cake mix
5 eggs
3/4-cup whole milk (for the cake mix)
1/4-cup vegetable oil
50 g nuts
1 3/4-cup condensed milk
1 3/4-cup whole milk
1 tsp vanilla

Note: If you cannot find cajeta you can buy dulce de leche instead.

Preparation:
Prepare the cake mix as explained in the instructions of the box. Beat 2 eggs, condensed milk, whole milk and vanilla. Pour the cake mix in a microwave safe cake pan that was previously spread with cajeta and then add the mix of the milks and the eggs. Put in a high-capacity microwave for 16 minutes.

If you don’t have a high-capacity microwave, this recipe can be done by putting the cake pan inside another cake-pan with water (baño de maria) in the oven to 350 degrees for an hour.

Serves: 8 portions.
It’s made:
In 25 minutes.

Domingo Delicioso ~ Pastel Imposible

Esta es una receta de Lidia Malagón que aprendí del canal Utilisima y me ha fascinado, no sólo por su delicioso sabor sino también porque tiene una apariencia muy atractiva y es genial para las fiestas porque de verdad llama la atención de la gente. También se puede hacer para tenerlo como postre y disfrutar de un pedazo en las tardes con un cafecito.

Es una receta muy fácil de hacer ya que se hace con el mix para hacer pasteles y se ahorra bastante tiempo en su preparación. Para los que se encuentran en el área tri-estatal de Nueva York, este puede ser un buen entretenimiento para este domingo lluvioso en el que no podemos salir de la casa. ¡Que tengan un dulce domingo! Pastel Imposible

Ingredientes:
1 botella de cajeta*
250 g harina para pastel de vainilla o chocolate (cake mix)
5 huevos
3/4 de taza leche entera (para el cake mix)
1/4 de taza aceite vegetal
50 g nueces
1 3/4 de taza leche condensada
1 3/4 de taza leche entera
1 cdita vainilla

Nota: Sino consigue cajeta puede comprar una lata de dulce de leche.

Preparación:
Preparar la mezcla de harina para pastel según las instrucciones de la caja. Batir 2 huevos, leche condensada, leche entera y la vainilla. Echar la mezcla del pastel en un molde para microondas previamente untado con la cajeta y luego agregar la mezcla de las leches y los huevos. Poner en un microondas de alta capacidad durante 16 minutos.

Sino tiene un microondas de alta capacidad, esta receta se puede hacer poniendo el molde en baño de maría en el horno a 350 grados durante una hora.

Sirve: 8 porciones

And that’s how La Familia Cool was born…

I agree with the phrase that says that each thing happens for a reason and that’s why when I lost my job of 4 years in March 2010 I decided that was rather an opportunity to dedicate myself to my daughter that was only six months old then. The experience of being with her all the time and being her caregiver has been wonderful, but also has been a challenge going from being a workingwoman outside the home to one who does it from home.

The lack of contact with the outside world during the cold months along with all the new things my baby was doing got me thinking on creating a family blog. I was already a blogger at the moment; I had a blog called “Del Otro Lado Del Sol” since 2007, however I felt the need to do something different to write about those things we new moms experience and, if I was lucky, find other Latina moms that want it to share theirs.

I thought about it for a few months and in December of last year I finally started this adventure of writing a “Mommy Blog”. In the beginning I had the pleasant surprise that there were many Latina mothers writing and sharing on social networks, but more than that that many of them write in Spanish like I do.

From there on I became a member of a new family; I was no more simply a new mom alone with her baby in her apartment. I started to be part of a community about which I only have good things to say; women willing to teach me and help me in this journey not only with their tips and interesting articles as moms, but also mentoring to better and grow my blog.

The reason why I write my blog is because I want to leave a record of our life as a family, a way of telling the stories that I probably will not remember in thirty years and that my children would be able read and learn about how our life was when they were little. Also I like being a blogger because I can share experiences, tricks, and recipes and share what I learn as a mom.

As I mentioned before, I started my blog last December and I think it will be very beneficial to my to be able to attend Blogalicious Weekend, this would be the first conference for me and can definitely mark a before and after for my page. The opportunity to make connections with potential sponsors, brands interested in advertising in my page and also get to meet my colleagues with whom I have already interact through the social media will be invaluable for me.

La Familia Cool is a page where we tell the life of the family members and where we share with the world different topics of interest. Each day, we MamiCool and PapiCool, work to honor our name and be Cool Parents who make good decisions for their children. If I get to be one of the lucky ones who receive the pass, I am sure this will take my blog to the next level where I will be able to develop many other ideas I have in store for the near future.

Y así nació La Familia Cool…

Yo estoy de acuerdo con la frase que dice que cada cosa sucede por una razón y es por eso que cuando perdí mi empleo de 4 años en marzo de 2010 decidí que era más bien una oportunidad para dedicarme a mi hija que en ese entonces tenía sólo seis meses. La experiencia de estar con ella todo el tiempo y ser quien la cuide ha sido maravillosa, pero también ha sido un reto pasar de ser una mujer que trabaja fuera de la casa a una que lo hace desde casa.

La falta de contacto con el mundo exterior durante los meses fríos unido a la cantidad de cosas nuevas que hacía mi bebé cada día me pusieron a pensar en hacer un blog familiar. Yo ya era bloguera en ese momento, ya que desde 2007 mantenía mi blog llamado “Del Otro Lado Del Sol”, sin embargo, sentí la necesidad de hacer algo distinto para escribir sobre esas cosas que las nuevas mamás experimentamos y, si tenía suerte, encontrar otras madres latinas que quisieran compartir las suyas.

Acaricié la idea por unos meses y en diciembre del año pasado finalmente me lanzé a esta aventura de escribir un “Mommy Blog”. Al comenzar tuve la grata sorpresa de que sí habían muchas madres latinas escribiendo y compartiendo en las redes sociales, pero sobre todo que hay muchas de ellas que como yo escriben en español.

A partir de ahí me convertí en miembro de una nueva familia; ya no era simplemente una nueva madre sola en su apartamento con su bebé. Comencé a ser parte de una comunidad sobre la cual sólo tengo cosas buenas que contar; mujeres dispuestas a enseñarme y ayudarme en este trayecto no sólo con sus consejos e interesantes artículos como mamás, sino también asesoría para mejorar y hacer crecer mi blog.

La razón por la que escribo en mi blog es porque quiero dejar un registro de nuestra vida en familia, una forma de contar las historias que probablemente no recuerde de aquí a treinta años y que mis hijos puedan leer y saber sobre cómo era nuestra vida cuando ellos eran pequeñitos. También me gusta ser blogger porque puedo compartir experiencias, trucos, recetas y aportar lo que aprendo como mamá.

Como mencioné anteriormente, comencé mi blog en diciembre pasado y creo que a mí me beneficiaría muchísimo poder asistir a Blogalicious Weekend, esta sería la primera conferencia para mí y puede definitivamente marcar un antes y un después para mi página. La oportunidad de hacer conexiones con posibles patrocinadores, marcas interesadas en anuciarse en mi página y además conocer a mis colegas con las que ya he estado interactuando a través de las redes sociales sería invaluable para mí.

La Familia Cool es una página donde se cuenta la vida de los miembros de la misma y donde compartimos con el mundo diferentes temas de interés. Cada día, nosotros MamiCool y PapiCool, trabajamos para hacerle honor a nuestro nombre y ser unos PapásCool que toman buenas decisiones para sus hijos. De ser una de las afortunadas que reciba el pase, estoy segura que esto llevará a mi blog al siguiente nivel donde podré desarrollar muchas otras ideas que tengo planeadas para el futuro cercano.

Colorful and flavorful cocktails with Kool-Aid
